Rainbow Wraps

Prep time: 20 mins
Cook time: 10 mins
Makes: 12 wraps

Things you need:

  • Beetroot – 225g can slice beetroot, drained
  • Baby Spinach – 50g baby spinach
  • Wraps – 4 spinach and herb wraps
  • Carrot – 1 large carrot, grated
  • Capsicum – 90g (1/3 cup) chargrilled capsicum, halved
  • Feta – 60g feta, sliced


  1. Pat beetroot dry with paper towel to remove excess moisture.
  2. Place 1 wrap on a flat surface. Arrange ¼ of the spinach, capsicum, carrot, beetroot and feta along 1 side of the wrap.
  3. Roll up wrap, folding in ends; to enclose filling.
  4. Cut in half. Wrap in plastic wrap.
  5. Repeat with remaining ingredients.

Sushi Sandwich

Prep time: 15 mins
Makes: 2 wraps

Things you need:

  • Wraps – 2 soft wraps
  • Rocket Leaves – 15g baby rocket leaves
  • Cream Cheese – 50g spreddable cream cheese
  • Carrot – ½ small carrot, cut into matchsticks
  • Shaved Ham – 80g shaved ham
  • Cucumber – ½ cucumber, cut into matchsticks


  1. Place the wraps on a clean work surface.
  2. Spread evenly with cream cheese.
  3. Top with ham and rocket. Place carrot and cucumber on one side of the wraps.
  4. Starting from the carrot cake and cucmber edge, roll to enclose tightly.

Ham & Pea Fritters

Prep time: 10 mins
Cook time: 15 mins
Makes: 10 fritters

Things you need:

  • Flour – ¼ cup flour
  • Shaved Ham – 100g (1 cup) shaved ham
  • Egg – 1 egg
  • Frozen Peas – ¾ cup frozen peas
  • Milk – 2 tablespoons
  • Oil – Oil for cooking


  1. Beat together flour and egg with two tablespoons of milk, until it is a reasonably thick, smooth batter (add a little more milk if necessary).
  2. Add cheese, ham and frozen peas to mixture, combine well.
  3. Heat oil in mid-heat frypan. Drop tablespoons-lots of fritter mix into pan.
  4. Flip over fritters when bubbles appear on top and bottom is golden.

Fruit Smoothie

Prep time: 5 mins
Makes: 1 smoothie

Things you need:

  • Banana – 1 banana, peeled
  • Pineapple Juice – ¾ cup pineapple juice
  • Strawberries – ½ cup strawberries, 1 strawberry to serve
  • Pineapple – Small Wedge to serve


  1. Place banana, strawberries and pineapple juice in the jug of a blender. Blend until smoother.
  2. Pour into a serving glass.
  3. Cut a small slit in the pointy end of strawberry and a slit in a small wedge of a pineapple.
  4. Arrange the fruit on the rim of the glass.
