Coeliac Australia says coeliac disease is one of the most under-diagnosed conditions in Australia. With broad-ranging symptoms ranging from abdominal upset to failure to thrive (in kids), to weight loss and even bruising, it can sometimes be difficult to tell what’s a genuine cause for concern. Coeliac Week aims to encourage symptom awareness among the public and general practitioners, and promotes the importance of getting tested.

From 4 Ingredients Gluten Free Lactose Free, by Kim McCosker
Serves 10
2 teaspoons instant coffee
375g packet dates, chopped
1 cup (175g) GF self raising flour
1 punnet of raspberries
Preheat oven to 180°C. Add the instant coffee to 1 cup (250ml) of boiling water and stir well. Into a bowl, pour the coffee over the dates and soak overnight. Stir in the flour. Spoon the mixture into a paper lined 20cm springform cake pan, and bake for 45 minutes. Remove and cool. When ready to serve, pile high with fresh, seasonal raspberries.
