This is an easy-to-make loaf with a lovely moist crumb. Anytime you’re cooking with pumpkin it’s very worthwhile to cook extra to make this cake. Once again there is loads of plant-based goodness and fibre in this delicious snack.

When my kids were little, we read that you could always tell pixies and fairies were around when you smelled cinnamon (at which point we headed to the spice drawer and smelled the cinnamon). So, anything that I baked with cinnamon, the fairies had helped make – whether I realised it or not!


  • 70g butter, melted
  • 170g honey or rice malt syrup
  • 2 eggs
  • 60ml (1⁄4 cup) milk
  • 225g (1 cup) mashed pumpkin (steamed or baked pumpkin roughly mashed)
  • 1 teaspoon cinnamon, ground
  • 1⁄2 teaspoon ginger, ground
  • 1⁄2 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 210g wholemeal spelt or wheat flour

Maple buttercream

  • 70g butter, at room temperature
  • 100g cream cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon, ground
  • Zest half lemon (optional)


Preheat your oven to 180oC. In a food processor or mixing bowl, combine the butter, sweetener, eggs, milk, pumpkin and spices until well combined and frothy.

Add the baking powder and mix again to combine.

Pour the batter into a well-greased tin (lined with baking paper). Bake for 40-45 mins or until a skewer inserted into the middle comes out clean.

To make the buttercream, beat all of the ingredients together until combined. Allow the loaf to cool completely before icing with the butter cream.


This is a great base loaf that you can also add to as you like. Optional extras (to mix through the batter at the end):

  • 1⁄4 cup sultanas or currants
  • 1⁄4 cup pumpkin seeds or sunflower seeds (or a mix)

Replace the butter with coconut oil and choose coconut milk.

Replace the flour with a good quality gluten-free flour.
