A Gold Coast teacher turned recipe book writer drew on her own intolerances for inspiration in her new low-FODMAP recipe book.
Primary School teacher Elle Joy is one of the one in seven Australians who suffer from irritable bowel syndrome.
Her new book Low FODMAP and Gluten Free Recipes is filled with 60 recipes certified by the founders of the low-FODMAP diet, Melbourne’s Monash University. The book has delicious recipes for the whole family. Elle recommends the sushi recipe for kids because it’s colourful, healthy and perfect for the school lunchbox.
Elle says food intolerances aren’t uncommon as it’s something she experiences every day with the kids she’s teaching at school.
“A lot of kids have food intolerances, it’s something I see every day,” Elle says. “I’ve got IBS and intolerances as well and there’s not a lot that’s very visually appealing on the market to for people with intolerances.
“I thought why not write my own book to help other families find great recipes suitable for people with intolerances.”
What on Earth is the FODMAP diet?
FODMAP stands for: Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols. Wait, what does that even mean? Well, it might come as a surprise, but FODMAPs are actually found in many common foods, including: garlic, onion, watermelon and honey.
For people with irritable bowel syndrome these short-chain carbohydrate sugars are poorly absorbed by the intestine causing a lot of pain and discomfort.
While this effects one in seven people research in this area is still ongoing and Elle recommends checking the Monash University FODMAP Diet app or the Monash FODMAP website (www.monashfodmap.com) for regular updates on which foods are low, moderate and high in FODMAPs.
